- 1 chocolate cookie crust
- 8 oz cream cheese, at room temperature
- 1/2 cup pure cane sugar
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 3 egg yolks
- 1/2 cup raspberry sauce
- 6 oz white chocolate, melted and cooled slightly
- 1 cup heavy cream, whipped to stiff peaks
Instructions
- Preheat oven to 350 degrees F.
- In the bowl of your electric mixer, beat the cream cheese on medium speed until creamy. Add the sugar, vanilla extract, and almond extract and beat until all ingredients are well combined. Add the egg yolks one at a time, beating well after each addition. Pour the cheesecake batter over the chocolate cookie crust. Drop teaspoonfuls of raspberry sauce randomly over the top of the cheesecake. Using a knife, swirl the raspberry sauce into the cheesecake batter.
- Bake for about 40 minutes or until center is almost set. Remove from oven and let cool for about 10 minutes before running a knife around the edge of the cheesecake and inverting onto a plate. Allow to cool completely.
- Melt white chocolate in a double boiler or in the microwave set on low power, stirring often. Pour melted white chocolate over the top of the cooled cheesecake and spread evenly. Refrigerate for at least 2 hours before serving.
