Strawberry Mascarpone Tart

A tart is a pastry shell with a sweet filling, typically fruit. It can be served as an accompaniment to coffee or tea, for breakfast, lunch or dinner. There are also savory tarts that use cheese and vegetables as the filling. A dessert tart might have a topping of whipped cream, custard, meringue (or other egg-based topping) or ice cream.

The Strawberry Mascarpone Tart is made in layers: first comes the shortbread crust topped with sugar and butter; then fresh strawberries are sprinkled on top and baked until they release their juices; finally mascarpone cheese mixed with sugar is spread over the berries before being covered by fresh sliced strawberries to create this delicious treat!

Strawberry Mascarpone Tart

  • Yield: 1 tart 1x

This simple tart has a shortbread cookie crust, rich mascarpone filling, and strawberry starburst topping.

For the shortbread crust:

  • ½ cup butter (2 sticks), at room temperature or a little warmer
  • ½ cup powdered sugar
  • 2 cups all-purpose flour

For the filling:

  • 16 oz mascarpone cheese
  • ¼ cup powdered sugar
  • 2 teaspoons lemon juice (from about ¼ of a lemon)
  • 2 cups strawberries, sliced

For the crust:

  1. Preheat the oven to 375°F and butter the inside of a tart pan.
  2. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl and with a hand mixer, cream together the butter and powdered sugar. Start on low speed and work your way up to avoid a powdered sugar explosion. Beat until light and creamy, then add in the flour and mix until combined.
  3. Press the dough into the prepared tart pan. Bake for 15-18 minutes, until lightly golden brown. Allow it to cool completely before filling.

For the filling:

  1. Place the marscapone cheese, powdered sugar, and lemon juice in a large bowl and use a hand mixer to beat it on medium-high speed for a few minutes, until it’s light and fluffy.
  2. Spoon it into the prepared tart crust and smooth the top with a rubber spatula.
  3. Arrange the sliced strawberries on the top as desired. Serve immediately, or keep it chilled in the refrigerator until ready to serve.
