3 (8 oz) packages of cream cheese, softened but still cool 540g
1 1/2 cups granulated sugar 300g
3 tablespoons all-purpose flour 30g
1 tablespoon cornstarch 9g
1 teaspoon baking powder 4g
1 teaspoon sea salt 6g
1 cup sour cream 240g
2/3 cup heavy cream 160g
2 tablespoons white vinegar 15ml
1 tablespoon vanilla extract 15ml
8 large eggs, room temperature”
1 1/2 cups semisweet chocolate chips 360g
1/4 cup heavy cream 60g
1 tablespoon unsalted butter 14g”
Preheat oven to 325 degrees F (160 degrees C). Butter the sides of a 9×13 inch baking pan.
In a medium bowl, mix together the oreo crumbs and melted butter.
Press into the bottom and up the sides of the prepared pan. Bake for 10 minutes. Remove from oven and let cool while preparing the filling.
In a large bowl, beat together cream cheese, granulated sugar, flour, cornstarch, baking powder, and salt until smooth.
