Description

Quinoa Fried Rice is an easy meatless dinner that comes together with a hefty amount of veggies and a few pantry staples. I love this recipe because it’s all about ratios, meaning that I can change it up based on what I have on hand.


Ingredients

  • 2 tablespoons vegetable oil
  • ½ medium white onion, chopped
  • 2 cups cooked quinoa (use a pouch of microwaveable quinoa or cook dried quinoa according to package directions)
  • 3 cups frozen vegetables of your choice
  • 2 eggs, beaten
  • 2 tablespoons reduced sodium soy sauce
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground ginger
  • Fresh cracked pepper, to taste
  • One fried egg per serving, optional

Instructions

  1. Heat a large skillet over medium-high heat and add vegetable oil. Add onion and cook until translucent, about five minutes. Add quinoa and frozen vegetables to the skillet and let cook for one minute at a time to achieve a fried rice texture. Cook until veggies are heated through, about five minutes.
  2. Reduce heat to medium and add move rice to one side of the pan. Add eggs, stirring constantly until they’re scrambled. This won’t take long! Season fried rice with soy sauce, garlic powder, ground ginger, and cracked pepper. If serving with fried eggs on top, fry them in a greased medium pan until the yolk is set to your liking. I cooked two fried eggs on the night we ate this, then went without them when I had leftovers the next day.

Notes

Use quick cook quinoa pouches instead of cooking it yourself. This will cost more per serving but works great in a pinch.
