Peach Cobbler Egg Rolls

Ingredients for Peach Cobbler Egg Rolls

  • 12 egg roll wrappers
  • 2 1/4 cups fresh peaches (approximately 3 peaches)
  • 1/4 cup white granulated sugar
  • 1/4 cup water
  • 1 tbsp corn starch
  • 2 tsp fresh lemon juice
  • 1/2 tsp pure vanilla extract
  • 1 large egg, beaten
  • 2 tbsp butter, melted
  • 1/2 cup packed brown sugar
  • 1 tbsp ground cinnamon

Ingredients for the Exquisite Vanilla Icing

  • 1 cup icing sugar
  • 2 tbsp whole milk
  • 1/2 tsp vanilla extract

Instructions for Peach Cobbler Egg Rolls

Begin with peeling and dicing the fresh peaches. Then, dissolve the corn starch in water using a whisk to eliminate any lumps.

On a medium heat stove, bring together the diced peaches, white granulated sugar, the cornstarch mixture, and fresh lemon juice in a saucepan. Stir continuously until the peach blend thickens and bubbles. Remove from heat and infuse with vanilla extract.

Beat an egg separately in a small dish. Melt butter in a microwave-safe dish.

Prepare a blend of cinnamon and brown sugar in another dish.

To assemble the egg roll, place 2 tbsp of the peach filling in the center of the wrap. Use the beaten egg as an adhesive on the corners of the wrapper, then fold as per the wrapper’s packaging instructions.

Dip the assembled egg rolls in the melted butter, then immediately roll them in the cinnamon sugar mix ensuring an even coating.

Lay out the egg rolls on a baking tray lined with parchment paper. Bake in an oven preheated to 400 degrees F for about 20 minutes, or until golden brown, flipping midway.

Finally, drizzle with homemade vanilla icing and a sprinkle of powdered sugar, if desired.
