These Korean beef bowls are the perfect quick and easy weeknight meal! They’re full of flavor, and can be on the table in just 30 minutes. Serve them over rice or quinoa, with some sauteed veggies on the side.

- 1 pound ground beef
- 1/2 teaspoon honey
- 1 tablespoon dark brown sugar
- 1 teaspoon sesame oil
- 3 tablespoons fresh lime juice
- 3 tablespoons soy sauce
- 1/4 cup water
- 1/4 teaspoon ground black pepper
- 4 green onions, only white and light portion minced
- 1 tablespoon fresh garlic, minced
- 1 tablespoon peeled and minced fresh ginger
- 1/4 cup chopped green onion (green portion)
- 1/4 cup chopped unsalted peanuts
- 1 tablespoon sesame seeds
- 2 cups cooked white rice
- sauteed veggies (carrots, zucchini…)
Instructions
- In a bowl, whisk together honey, dark brown sugar, sesame oil, fresh lime juice, soy sauce, and water. Add ground beef and mix well to combine. Add black pepper, green onion, garlic, ginger, and green onion whites and stir to combine. Allow the mixture to marinate for at least 30 minutes.
- Preheat oven to 375 degrees F (190 degrees C).
- Spray a baking dish with cooking spray. Add the beef mixture and spread into an even layer. Bake for 25 minutes, or until the beef is cooked through.
- Serve over cooked white rice and top with green onion greens, peanuts, sesame seeds, and sauteed veggies. Enjoy!
