- 1 tablespoon olive oil
- 1 large onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 rib celery, diced
- 1 garlic clove, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups uncooked white rice
- 2 cups cooked and shredded chicken
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (4.5 ounce) can chopped green chilies, undrained
- 3 tablespoons chopped fresh parsley leaves

- Add oil to Instant Pot and select the “Sauté” function. Add onion, bell peppers, celery, garlic, and cook until vegetables are soft, about 5 minutes.
- Stir in chicken broth, thyme, smoked paprika, cajun seasoning, salt, pepper, rice, chicken, tomatoes with juice, green chilies with juice, and parsley.
- Lock the lid in place and select “Manual” or “Pressure Cook” setting and set the timer for 20 minutes. When timer goes off allow pressure to release naturally for 10 minutes and then use the quick release method to release any remaining pressure.
