This is a delicious, fresh strawberry cake that’s perfect for springtime celebrations! The cake is made with a fluffy white cake batter, and the strawberries are layered in between the layers and on top of the cake. The finishing touch is a delicious strawberry cream cheese frosting.   • 1 vanilla cake mix (or white, yellow cake mix)
  • 1 box strawberry gelatin mix (Jell-O)
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1 pint fresh strawberries, chopped (or 1 cup crushed fresh strawberries)
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease and flour one 9×13 inch baking pan.
  3. In a large bowl, combine the cake mix, gelatin mix, eggs, oil and water. Beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour batter into prepared pan.
  4. Bake at 350 degrees F (175 degrees C) for 25 minutes. Cool cake completely.
  5. In a medium bowl, beat the cream cheese, butter, powdered sugar and vanilla extract until smooth. Add milk and beat until light and fluffy. Frost the cake.
  6. Refrigerate cake until serving.
