Cinnamon Roll Cookies

These cookies are amazing! They’re soft and fluffy and have the delicious taste of cinnamon rolls.


  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

For the filling:

  • 3 tablespoons unsalted butter, at room temperature
  • 3 tablespoons brown sugar, packed
  • 2 tablespoons ground cinnamon


  1. Preheat oven to 350°F (180°C). Line two baking sheets with parchment paper.
  2. In the bowl of your electric mixer, beat the butter and sugar until light and fluffy. Add the egg and vanilla extract and beat until combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add to the butter mixture in three additions, mixing until just blended. The dough will be very soft.
  4. To make the filling, mix the butter, brown sugar, and cinnamon in a small bowl. Set aside.
  5. Place spoonfuls of dough (about 2 teaspoons each) on one of the prepared baking sheets. Using your thumb or a small spoon, make an indentation in the center of each cookie dough mound. Fill each indentation with some of the filling mixture (you may not use all of it).
  6. Place the remaining dough on the other prepared baking sheet. Freeze for 30 minutes, or until firm.
  7. preheat oven to 350°F (180°C). Bake the cookies, one sheet at a time, for 10 minutes, or until the edges are golden brown. Cool on the baking sheets for 5 minutes; then transfer to wire racks to cool completely.
