Cinnamon Roll Cookies

These cookies are amazing! They’re soft and fluffy and have the delicious taste of cinnamon rolls.
Ingredients

- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
For the filling:
- 3 tablespoons unsalted butter, at room temperature
- 3 tablespoons brown sugar, packed
- 2 tablespoons ground cinnamon
Instructions
- Preheat oven to 350°F (180°C). Line two baking sheets with parchment paper.
- In the bowl of your electric mixer, beat the butter and sugar until light and fluffy. Add the egg and vanilla extract and beat until combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add to the butter mixture in three additions, mixing until just blended. The dough will be very soft.
- To make the filling, mix the butter, brown sugar, and cinnamon in a small bowl. Set aside.
- Place spoonfuls of dough (about 2 teaspoons each) on one of the prepared baking sheets. Using your thumb or a small spoon, make an indentation in the center of each cookie dough mound. Fill each indentation with some of the filling mixture (you may not use all of it).
- Place the remaining dough on the other prepared baking sheet. Freeze for 30 minutes, or until firm.
- preheat oven to 350°F (180°C). Bake the cookies, one sheet at a time, for 10 minutes, or until the edges are golden brown. Cool on the baking sheets for 5 minutes; then transfer to wire racks to cool completely.
