Chipotle Chicken Tacos

A delicious and easy recipe that will take less than 30 minutes to make and only requires a few simple ingredients. You’ll love the flavor of these tacos, and they’re perfect for a quick and easy weeknight meal!

When I was browsing chicken taco recipes, I noticed that most of them require quite a few ingredients and that’s not something I have time for on a weeknight. The key to this recipe is sticking to basic seasonings like salt and pepper, then using a super flavorful ingredients like chipotles in adobo sauce to provide a big punch of flavor. I mean…look at it!

This recipe has become my go-to anytime I have a craving for chicken tacos. I can’t get enough of the smoky chipotle spice paired with creamy avocados and soft tortillas. This recipe can also be used as the base for nachos, burrito bowls…you name it!

Don’t have an Instant Pot? You can use a slow cooker for this recipe, too. Prep it the night before, turn on the slow cooker in the morning, and you’ll have chicken tacos waiting for you when you get home at night. I’m on board with that.

Easy Chipotle Chicken Recipe Tips:

– Preheat oven to 375 degrees F.

– Season chicken breasts with spices of choice. I recommend using a blend of chili powder, cumin, and paprika.

– Spread a thin layer of chipotle sauce over each chicken breast.

– Bake in preheated oven for 25 minutes or until the chicken is cooked through.

– Serve with rice and beans, or your favorite sides.

What to serve with Chipotle Chicken

Chipotle chicken is a delicious dish that can be served with many different sides. Some of my favorite sides to serve with chipotle chicken are white rice, black beans, and tortilla chips. You could also serve it with pico de gallo, guacamole, or salsa.

Chipotle Chicken Tacos

This recipe has become my go-to anytime I have a craving for chicken tacos. I can’t get enough of the smoky chipotle spice paired with creamy avocados and soft tortillas.


Ingredients

Chicken

  • 1 pound boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons pureed chipotles in adobo sauce
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1/2 cup water

Toppings

  • Tortillas

  • Desired toppings: I used pickled radishes, cilantro, avocado, and sour cream mixed with a bit of chipotle peppers. Other ideas: cheese, shredded purple cabbage, tomatoes, salsa, guacamole 

Instructions

  1. Cut each chicken breast into 3 pieces. Place cut chicken breasts into an Instant Pot or slow cooker. Add spices, lime juice, olive oil, and water to the pot.
  2. If using an Instant Pot, select the Poultry setting and adjust to 12 minutes. If using a slow cooker, put the lid on and cook on high for 4-6 hours or low for 8 hours. I’ve found that all slow cooker models vary a lot in temperature, so adjust as needed.
  3. When chicken is done cooking, shred it with two forks and place back into the pot. If using an Instant Pot, I like to turn the Saute feature on to reduce the sauce down a bit.
  4. Get out all of your taco fixings: tortillas, toppings, sauces, and etc.

Notes

I used 2 tablespoons of the pureed chipotles in adobo sauce and felt like it had a nice amount of heat. Feel free to increase it by the tablespoons
