  • 2 lbs of chicken thighs and legs  cut into pieces
  • 1 onion finely sliced
  • Olive oil as needed
  • 3 tbsp of tomato paste
  • 1/2 tsp paprika or to taste
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups white wine or any cooking wine you have in the cabinet. Adjust the quantity according to your liking, I like it with a little strong flavor without much alcohol
  • 2 bay leaves
  • 1/2 tsp dry thyme


1. Sauté onions in olive oil for 5 minutes or until golden color then add the chicken pieces and brown them well. Add paprika, oregano, salt, pepper, tomato paste and mix well with ingredients already in the pot.

2. Pour the wine and let it evaporate for approximately 5 minutes, then cover with a lid and simmer on low heat for 20 minutes or until chicken is tender.

3. In a separate pan sauté thyme and bay leaves in little oil until fragrant then add them to the chicken Chesapeake dish, turn off the heat and let it stand for 5 minutes before serving.
