Broccoli and Cheddar Stuffed Chicken

Ingredients

  • 4 substantial boneless chicken breasts, skin removed
  • 3 cups of vibrant broccoli florets
  • 1 1/2 cups of generously shredded cheddar cheese
  • 2 oz. of soft room-temperature cream cheese
  • 1 Tablespoon of freshly chopped chives or alternate herbs
  • Garlic powder, cumin, and other preferred spices to taste
  • 1/4 cup of quality olive oil, separated into halves

Instructions

Initiate the preparation by preheating your oven to a moderate 400°F.

Put the crisp broccoli in a safe microwave bowl, and drizzle 2 tablespoons of water over them. Secure the bowl with a large plate and microwave the contents for 2 minutes.

Upon removal, carefully drain the broccoli, patting dry with paper towels.

Mince the broccoli into tiny, bite-sized morsels and place them back in the bowl.

The next step is to introduce the shredded cheddar, cream cheese, chives, and a pinch each of salt and pepper to the bowl. Blend this mix thoroughly.
