  • 1 1/2 cups (about 3) mashed ripe bananas
  • 3/4 cup packed light brown sugar
  • 1 large egg
  • 1/3 cup unsalted butter, melted and cooled
  • 1 tsp pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp kosher salt


  1. Preheat oven to 375°F. Spray a muffin tin with baking spray or line it with cupcake liners.
  2. In a large bowl, mix together the mashed bananas, brown sugar and the egg until combined. Quickly whisk in the cooled melted butter and add the vanilla extract. Mix until combined.
