Baked Sweet and Sour Chicken

  • 2 large eggs
  • 1/4 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1 tsp. garlic powder
  • 1/2 tsp. sea salt
  • 1 cup corn starch
  • 4 boneless skinless chicken breasts, sliced into 1-inch chunks
  • 2 tbsp. soy sauce
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar

Before anything else, start by heating your oven to a moderate 325F. Meanwhile, delicately line a baking dish, preferably 13 x 9 inches in size, with a sheet of parchment paper. This not only prevents sticking but ensures a smooth removal of your delightful dish later on.

Sprinkle the chicken chunks with a hint of salt and pepper, ensuring an even spread for that balanced flavor. Transfer the corn starch to a sturdy ziploc bag. Now, introduce your seasoned chicken pieces into the bag and give it a gentle shake. This technique will coat each piece uniformly with the corn starch, ensuring a crisp outcome.

Crack open the eggs into a wide, shallow bowl and give them a good whisk. Now, as you await your skillet to heat up with the vegetable oil till it resonates with a sizzle, prepare the chicken. One by one, drench them into the egg mixture, ensuring a full wrap of liquid gold. Swiftly place each piece into the skillet and let them achieve that perfect golden brown hue. Once seared, they’re ready for their spot in the baking dish.

In a separate mixing bowl, embark on the journey of flavors. Blend in the granulated sugar, tangy ketchup, aromatic apple cider vinegar, savory soy sauce, the punch of garlic powder, and the subtle sea salt. Whisk these ingredients till they marry into a lustrous sauce.

Pour this liquid harmony over the awaiting chicken, ensuring every piece is bathed in its goodness.

With everything in place, slide the pan into the preheated oven. The chicken will bathe in the flavors and transform over the next 60 minutes. Halfway through, at the 30-minute mark, give the pieces a tender toss, ensuring they bake evenly and soak up every bit of the sauce.

Once done, it’s best served steaming hot over a fluffy bed of rice. The contrasting textures and the amalgamation of flavors are sure to transport you to a culinary haven. Enjoy every bite!
